The deadly COVID 19 virus has changed the way we work. As gatherings are restricted and making safe distance is the new normal, most of us are working from home. 5. Mexican penne with avocado


If you prefer vegetables, then this healthy, vegetarian dish would be your go-to choice. It is fat and rich in iron, vitamin C and fibre, and low in calories. But you should use stored cupboard essentials, such as canned sweetcorn, chopped tomatoes, and vegetable bouillon powder. And do not forget to use toppings like a squeeze of lime juice, chunky avocado, and a handful of chopped coriander.
